My son loves to eat peanut butter and jelly rollups, cut up like sushi, but his dad and I prefer rollups with cream cheese, salsa, and pepperoni. Perfect for a beautiful day at the park!

some Sanfrancisco Sour Dough bread, the real stuff, artisan bread not that molded stuff.
Some Cheddar and Pepperjack Cheeses.
Some condiments such as dark yellow mustard, some mayo and whatever else tickles your fancy. Roma or vine ripe tomatoes and some lettuce to taste.
Add some fruity wine and have an afternoon in the park under an old willow tree with a favorite person, for the most delicious afternoon. Caution, some assembly required!

Mary said...I love bringing really good fruit salad on a picnic with me :) Usually I include a combination of peaches, apples, grapes, melon, and berries in my fruit salads. Also, another good idea is to make "ants on a log", which is celery sticks filled with peanut butter and topped with raisins. This is especially good if you're hiking to your picnic spot, since it will give a great energy boost!

Erin Byrd said...4 boneless chicken breasts, seasoned with garlic and onion powder, grilled or baked. After cooling dice and mix with 1 cup low fat mayonaise, more to your likeing. Add 1/4 cup chopped celery, 1/2 cup chopped walnuts, 1 to 1/2 cup diced mix of red and green grapes and 1 small firm gala apple diced.
Serve on dinner sized potato rolls, soft tortillas or with crackers.
I freeze juice packs and use them as my icepacks. They thaw by lunch!

Jen said...We like spaghetti salad...cook angel hair pasta according to package directions...rinse and allow to cool. Slice or dice some fresh cucumber and tomato. Toss with pasta, salad seasoning and Italian dressing. This one is cool and refreshing and you don't have to worry so much about it spoiling, either.

Stella said...It's never a picnic without some fried chicken. I use chicken thighs and legs. Coat with seasoned flour (salt, pepper, garlic powder, chili powder, cumin). Heat vegetable oil on stove. Place seasoned flour in brown paper bag and drop chicken pieces into flour mix. Shake well. Gently place chicken in hot oil, fry 4-5 pieces at a time, leaving room for chicken (do not overcrowd). Fry chicken for approx 25-30 minutes. Flip after 15 minutes to ensure even cooking/crispiness on both sides. Drain chicken on paper towels. Eat and enjoy!

Corrie said...I'm a big fan of Portobello sandwiches! Coat Portobello mushrooms in a mixture of olive oil, garlic, salt, pepper and fresh basil. Grill until soft, then place on fresh bread with goat cheese and spinach. SO delicious!

2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
¼ cup Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Sliced Thin
¼ teaspoon Ground Cumin (very important!!!)
¼ teaspoon Sugar
¼ teaspoon Salt
½ cup Cilantro (more To Taste!)
juice from 1/2 a lime

1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic, minced
1 teaspoon salt
1/8 teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups frozen corn kernels
1 avocado - peeled, pitted and diced
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup chopped fresh cilantro (optional)

We love "Bobby T's" spicy chicken tenders:
skinless chicken tenders, grill tenders then in a bowl, mix 1 bottle of Texas Pete WIng sauce with dark Brown sugar to taste. Slather sauce on tenders and enjoy! OR:
Glazed Keilbassa- grill Keilbassa and slather on Sweet Baby Rays BBQ sauce. Set cooked/slathered keilbassa on top rack of grill to let sauce carmalize! YUMMM!!!!!

ginger said...2-3 cups broccoli florets-- you can buy them in bags at the grocery already cut up-- some cashews and dried cranberries or cherries-- about 1/2 cup each or more-- and a simple dressing made of 1/2 cup mayonnaise, 3 TBLS honey, and 1.5 TBLS apple cider vinegar-- toss and serve. My kids love it and it's great on the side of just about anything.

My children are not hard to please so we usually fix something with crackers, bread, or tortillas. My kids really love chicken salad on crackers with fruit salad they can eat with their hands.
Fruit Salad
1 apple, 6 strawberrys, 20 grapes(green and purple), melon, berries of choice. Mix, seperate, put in ziploc bags.
I mix this up and put it small balls for each child
Chicken Salad
1 skinless, boneless chicken breast 2/3 cup elbow macaroni 1 (20 ounce) can pineapple chunks, drained 1 apple, cored and diced 1 stalk celery, diced 2 (1.5 ounce) boxes raisins 1 cup mayonnaise 1 teaspoon white sugar 1 teaspoon salt.
I also use frozen bottles of water with crystal light as our ice packs. Works really well.

mix all together and enjoy
