Cooking Rocks Challenge: Week 2 - Sloppy Turkey Joes & Cheese Fries

The first week of the Cooking Rocks Challenge was successful - Nolan ate his lunch and dinner but devoured dessert. Nolan picked Sloppy Turkey Joes and Cheese Fries as our next test recipe. His decision-making process is simple - it's all about the names.

We tried this meal twice - once every ingredient and the second time we amended the recipe by removing red onions. Besides not liking the taste, Nolan wanted to stop using onions because they literally made him cry when I was chopping them. The Cheese Fries were an instant hit. Overall, a good meal that felt moderately healthy and was incredibly easy to make.

The recipe is enough to serve four people. To cook up a batch of Sloppy Turkey Joes and Cheese Fries:

Start with the Cheese Fries. Cook 1 bag of frozen french fries according to the instructions on the package. We used Yukon Gold potatoes seasoned with sea salt - they took 20 minutes to bake at 450 degrees.

While the fries are in the oven, pour two tablespoons of olive oil into a skillet over medium-high heat.. Cook 1 1/3 pounds of ground turkey, breaking it up with a wooden spoon - a good job for .children if you're comfortable with them being near the stove. Add 1/2 finely chopped red onion and 1/2 finely chopped red bell pepper to the cooking turkey. In a small bowl, have your little chef mix 1 tablespoon of any grill seasoning blend, 2 tablespoons of brown sugar and 1 tablespoon of Worcestershire sauce. Pour this mixture evenly over the cooking meat and stir it all up. Turn the heat to a simmer and cook for 10 minutes. Then place the bottoms of crusty sandwich rolls on plates. Use an ice cream scoop to place a heap of the mixture on the bread, and then add the bun top. The recipe calls for this dish to be served with celery sticks and carrot sticks, but we ate them before dinner was ready!!

As the sloppy turkey cooks, you can make the cheese sauce for the fries. Melt 2 tablespoons of butter in a saucepan over medium heat. Add 2 tablespoons of flour and cook it for about one minute. Stir in 1 1/2 cups of milk - the recipe calls for whole milk but we used skim an it turned out fine. Continue stirring the milk until it begins to thicken. Next, mix in 2 1/2 cups of shredded sharp cheddar cheese with a wooden spoon. Once the cheese is completely melted, remove the pan from the stove and add 1/4 cup of ketchup. When the french fries are ready, you can pour the cheese over the fries or serve the sauce on the side for dipping.

Total prep and cooking time: 24 minutes

I loved this meal - it was simple and tasted great. Nolan liked it as well, but he was turned off by the meat on the bread. We had to remove the bun and just let him eat the meat and fries.

I also found that the sloppy turkey mixture could easily be used for tacos or tostadas. Just get some crispy shells or tostadas and add the meat along with all the fixins' - cheese, sour cream, lettuce and chopped tomoatos.
