Cooking Rocks Challenge: Week 4 - Crunchy Oven-Baked Chicken Toes

Besides liking the name "chicken toes," Nolan assisted with nearly every single step of the recipe, starting with the crunching of Special K cereal to make up the coating for the chicken. While the recipe called for corn flakes, I decided on using Special K since it's a cereal we like to eat anyway. Nolan measured and added bread crumbs, brown sugar, all the spices and vegetable oil - and then had a blast mixing it all up (and sneaking little tastes). After I cut up chicken breasts into "tenders," he handled dipping the chicken into flour, eggs and finally the crunchy coating mix. I had to remind him not to eat any of the cereal/breadcrumb mix from this point on. And when he was done, we thoroughly washed his hands under very warm water with antibacterial soap.
We baked the chicken for about 18 minutes and while it cooked, we combined some honey mustard and barbecue sauce to make a tasty dipping sauce.
This dish was such a hit the first time that we've made it three times at Nolan's request. Each time we tweaked the recipe a bit, either because we ran out of an ingredient or decided it needed a little "extra" something. We learned that the chicken toes are even tastier when you omit the bread crumbs and double the amount of cereal. An extra hit of allspice also makes the coating extra good.
Total prep and cooking time: 51 minutes - I spent about 10 minutes getting the chicken cut and putting the ingredients in little bowls for Nolan to easily mix together. Nolan took his time with his little assembly line of ingredients. Because we didn't use the Creamy Salsa Dip and Veggies as part of the "meal," I cooked up some rice pilaf and some sweet peas - this added about 20 minutes to our overall time.
