Cooking Rocks Challenge: Week 7 - Cinnamon-Apple Nachos

After causing my son's mouth to taste like it was on fire with Spicy Honey-Nut Chicken, we sweetened things up with  Cinnamon-Apple Nachos. Nolan so enjoyed making this dessert. He used his own scissors to slice up whole pita bread into triangles and then peeled them apart.  Then he got artsy while he painted the pieces with melted butter and sprinkled a cinnamon-sugar mixture over them. We baked them for seven minutes.

While we waited for the pita chips, we made the nacho sauce by mixing honey, creamy peanut butter and milk over low heat on the stove. Once it was warm, we poured it over a plate of the baked pita chips and then topped it all off with diced Granny Smith apples and slices of banana.

Total prep and cooking time: 30 minutes - it takes serious time for a preschooler to cut up pita bread! He was having fun so we let this art project take as long as he needed.

The Cinnamon Apple Nachos will be made many more times by us. It's light and healthy on top of being fun for kids to make. It's a great dish for a midday snack or for playdates. You could also serve the sauce on the side since most kids love to dip chips. And if you wanted to make this even easier, you could just buy cinnamon-apple pita chips from your grocery store. But then where's the fun in that?!
