Scrambled eggs and spinach
If you are looking for a healthy small meal or snack for your little one, try this out. And, if you have any other scrambled eggs with healthy stuff added variations that your kids like, lay 'em on me in the comments.
- Heat a small skillet over medium high heat with a touch of butter or olive oil
- Crack two or three eggs right into the pan, and stir them up a little
- Add a few handfuls of baby spinach leaves, as much as you like (remember, it'll cook down), and salt, if you like
- Keep stirring and scraping the cooked egg off the bottom until the eggs are all cooked and the spinach is dark green and cooked (it'll seem like it's taking too long and isn't going to work, then all of a sudden you'll be finished)

Growing up we had scrambled eggs and spinach as a side dish quite often. My sister would refuse to eat anything but Popeye spinach, so my mom had a popeye spinach can she would put on the counter while cooking and use the store brand instead! lol. We loved it though.

Five or six eggs, pepper, red and green bell peppers (half each), tomato, onion, a few cloves of garlic. Sometimes leftover rice from Chinese food (only time we eat white rice). Occasionally some grated carrot, if we have.
Mix it all up, cook it.
Makes enough for three or four people, and everybody seems to love it :)

St Paddy's Day is next weekend. Make Green Eggs and Ham to celebrate. Pick any breakfast casserole you like (preferably with eggs and ham!) and add drained chopped spinach to it. Yum! My kids are begging for it this year already.

I've been mixing in small amounts of dried seaweed, ground to little bits in with my toddler's eggs for almost a year now. You can barely see it, it gives them a salty taste, and has lots of naturally occuring minerals, which are much easier to absorb then synthetic or refined supplements. I also add pinches of dried nettles, red raspberry leaf, ground flax seed, and nutritional yeast (all have tons of great nutrition in areas that are hard to get these days from regular foods). For flavor and extra protein, cheese, of course, is great. I've also made a sandwich of ground beef, egg, bell pepper,tomato, and onion all fried together.
