Quick, delicious side dishes for the entire family

I can't begin to tell you how many times I stare vapidly into the pantry, just wishing the dinner fairy will bestow some fabulous, healthy dinner idea upon me. When it comes to putting together quick dinner ideas, I am the worst. The WORST.Thank goodness I found some great side dish ideas in this month's Cookie Magazine. Rice and beans, smashed carrots, mini corn on the cobs- now, these are things that my son will eat and really don't take much time at all. I made the rice and beans recipe last night and it was a hit with the entire family.

My favorite go-to healthy meal is one all three of us like (me, hubby and 18-month old). We call it Taco Rice.
Brown 1 lb. of protien in a saucepan (I've used ground beef, ground chicken breast, ground turkey breast and veggie crumbles)
Add your favorite taco spices to browned protien along with about 1/4 - 1/2 cup water.
Add about 2-3 cups cooked brown rice (in a pinch I use the instant), a can of black beans that's been rinsed and drained (organic soy black beans are the usual for us but any kind will do), toss in about half a bag of frozen corn, and any other veggies you have lying about (chopped tomatos, diced peppers, etc) and heat through.
Serve over greens for a salad, in tortillas or just plain in a bowl. We usually have ours with sour cream and salsa.
Depending on how many veggies you add (or you can also add a 2nd can of beans) you can get SEVERAL meals out of this. In fact, this usaully turns up at least once a month on our table and the 15-20 minutes it takes to make a single batch will serve us at least 3 dinners and a couple of lunches for work.

I have to remember this. I think it would totally work for our family. And my son LOVES any sort of rice affair, while I'm a huge fan of one pot type meals.
