Is your refrigerator currently housing enough Thanksgiving leftovers to last until Christmas? I swore I wouldn't do it, but I did. I prepared an eighteen pound turkey and all the trimmings to feed three people. Yes, we have leftovers and lots of them. Reheated plates of our Thanksgiving feast will make for good eating for about a day and half. After that, it begins to get a little old and it's time to start mixing things up a bit. Our own Rob Barrett has a yummy-looking calzone recipe that I intend to try and I've scoured the Web for more. Here are some links to easy-to-prepare dishes made from ingredients you likely have coming out of your ears.

Sweet Potato Pancakes - Topped with leftover cranberry sauce, this is a sweet twist on a breakfast standard.

Turkey Apple Salad - These two fall favorites are bound to taste great together.

Turkey Casserole - Layer up your turkey and trimmings into an easy casserole. It doesn't get any simpler than this.

Turkey Enchiladas - Like chicken, only turkey!

Potato Croquettes - Paula Deen knows what to do with leftover mashed potatoes.

Cranberry Sauce - Slashfood has eight great ideas for finishing off the cranberries including one involving vodka.
