ARLINGTON, Va. - Actor Jeff Bridges will join Virginia Gov. Bob McDonnell and U.S. Agriculture Secretary Tom Vilsack in northern Virginia to promote a new initiative to fight childhood hunger.<br />
<br />
The three will join other officials Tuesday afternoon at Barcroft Elementary in Arlington to launch Virginia's "No Kid Hungry" campaign. The program will be a public-private partnership to connect low-income kids to federal nutrition programs, like those that provide lunches during summer when school's out.<br />
<br />
Currently fewer than 20 percent of kids in Virginia who are eligible for free and reduced price school lunches participate in summer meal programs.<br />
<br />

		<strong>1. Keep a Well-Stocked Pantry</strong></div>

Even with all the great recipes in the world, cooking will never truly be easy if you don't have a well-stocked pantry, refrigerator and freezer. Nothing is more annoying than having to run out to the store -- maybe more than once -- in the middle of cooking because you forgot to check whether you had olive oil in the house.<br />
<br />
My spice drawer is organized so I can always see what I have and what I need to buy -- and I can put my hands on each spice without turning the drawer upside down! My freezer is stocked with a few important ingredients that I use all the time. Since I use the same ingredients over and over again, I know I won't have to shop for everything I need every time I cook. When it's time to make dinner, all I have to do is stop at the store and pick up a few perishables, like fresh salmon, fresh herbs and a vegetable. Maintaining a well-stocked pantry is a habit I got into early in my cooking career and it makes my life so much easier.<br />
<br />
<strong>2. Have Good Equipment</strong><br />
Some people think that having every kind of pot and pan and kitchen gadget under the sun makes cooking easier, but I'm not one of them. I hate specialized equipment, like pasta machines and garlic presses, that does only one job. I stick to just good-quality essentials and I keep them within easy reach.<br />
<br />
I love opening my pot drawer and seeing each pot sitting with its own lid on top. I don't have to excavate for the one I want from a pile of mismatched pans that I got for my wedding forty years ago. Even though I have the luxury of a good-size kitchen, the cookware I own is a perfect set of All-Clad pots, saut&eacute; pans and roasting pans, plus one huge stockpot for making soup, which sits right on the stove.<br />
<br />
<strong>3. Set the Table Well</strong><br />
When I set a table, I always choose a one-color theme that's appropriate for the season -- maybe raspberry in spring or pumpkin in autumn. With my theme in mind, I'll look at what's available in the grocery store in the produce and flower sections while I'm shopping for dinner. And here's my trick: I always have Post-it notes in the kitchen drawer to make a seating arrangement; one color for the girls, one for boys. I put a name on each note and then I can move them around easily until I find the perfect seating arrangement for a great party.<br />
<br />
<strong>4. Serve the Smart Way</strong><br />
A big part of keeping a meal easy is serving it in an easy way. Before I was in the food business, I would serve dinner the old-fashioned way. Everything was put into bowls and either arranged on a buffet or brought to the table and passed around for people to help themselves. ... Now, instead of passing all those bowls, I arrange Greek lamb with yogurt mint sauce down the middle of the platter, tomatoes roasted with pesto down one side, and couscous with toasted pine nuts down the other. If it's just a few people, I'll serve everyone at the table; if it's a big party, I'll serve it from a buffet in the kitchen or the sideboard in the dining room. It's easier to assemble, easier to serve and when everyone goes home, there's only one platter to clean up!<br />
<br />
<strong>5. Have What It Takes to Bake</strong><br />
A few key pieces of equipment make all the difference when you're baking. First, I prefer a French rolling pin because I can really <em>feel </em>the dough while I'm rolling it out. Second, I have three timers on the stove so I can have several things baking at once -- and I won't forget about them! Next is a digital scale; if a package of chocolate chips is 12 ounces and I need only 6, a scale ensures that my quantities are accurate. Finally, I have lots of thermometers -- oven thermometers, candy thermometers and instant-read thermometers -- so I know when something is exactly the right temperature.<br />

<!--End of UEC -->When the season of Lent arrives, families who observe it more stringently will be incorporating dietary limits that can make those 40 days feel more like 400.<br />
<br />
The big items on the Lenten food hit list? For Catholics, it's meat on Ash Wednesday and Fridays. For the Orthodox community, it's pretty much all animal products. And in other corners of Christendom, it may boil down to sacrificing whatever you love most -- chocolate, sugar, coffee, or anything else that's good and tempting.<br />
<br />
But before the official fast begins, there's a festival that acts as a springboard to the oncoming period of austerity and abstinence: Shrove Tuesday -- or as many of us call it, Mardi Gras, the French phrase for Fat Tuesday. With New Orleans being the hub of Mardi Gras celebrations in the U.S., we focused our <a href="http://www.parentdish.com/bloggers/deborah-kloha/">monthly family cooking foray</a> on that region's signature cuisine: Cajun food.<br />
<br />
Well, loving our red-pepper fix as much as anything, my daughter Anna and I decided to prepare <a href="http://www.kitchendaily.com/recipe/jambalaya-146054 " target="_blank">jambalaya</a>, which is a spice-infused concoction of rice, meat and seafood not unlike its Spanish cousin, paella. We often throw together a quick version from the popular boxed mix. But this month, we wanted to make the real deal -- something from scratch, the way you'd probably find it in a French Quarter caf&eacute;.<br />
<br />
We don't know exactly how this dish came to be. Theories abound that the word "jambalaya" may be derived from a blending of various French, Spanish or African words for some of the ingredients found in it. But what we do know is this: It creates a one-pot meal that starts with the classic "trinity" of Cajun cooking -- saut&eacute;ed onions, celery and green pepper -- and combines it with the aforementioned staples to create a warm and lively meal that stands alone. We don't even throw in a side dish or bread when jambalaya's in the house.<br />

<strong>Ingredients:</strong><br />
1 pound fresh or frozen peeled and deveined shrimp<br />
1/2 cup chopped onion (1 medium)<br />
1/3 cup chopped celery<br />
1/4 cup chopped green sweet pepper<br />
2 cloves garlic, minced<br />
2 T. cooking oil<br />
2 c. chicken broth<br />
1 14.5-oz. can diced tomatoes, undrained<br />
8 oz. andouille or kielbasa sausage, halved lengthwise, cut in 1/2-inch slices<br />
3/4 cup uncooked long grain rice<br />
1 t. dried thyme, crushed<br />
1/2 t. dried basil, crushed<br />
1/4 t. black pepper<br />
1/4 t. ground red pepper<br />
1 bay leaf<br />
1 cup cubed cooked ham<br />
<br />
<strong>Directions:</strong><br />
Thaw shrimp, if frozen. Set shrimp aside. In a 12-inch skillet cook onion, celery, sweet pepper and garlic in hot oil until tender. Stir in chicken broth, undrained tomatoes, sausage, rice, thyme, basil, black pepper, red pepper and bay leaf. Bring to a boil; reduce heat. Simmer, covered for 15 minutes. Stir in shrimp.<br />
<br />
Return to boiling. Simmer, covered, about 5 minutes more or until shrimp turn opaque and rice is tender. Stir in ham; heat through. Discard bay leaf. Makes about 7 cups (6 main-dish servings).<br />

A new London ice cream parlour is offering breast milk ice cream alongside the more traditional flavors like raspberry ripple and mint chocolate chip.<br />
<br />
The breast milk ice cream -- named Baby Gaga -- is on sale at the Icecreamists parlour in Covent Garden.<br />
<br />
So where does the milk come from? Well, Victoria Hiley, 35, from Leeds, has already donated a total of 30 fluid ounces of breast milk. And a number of ladies answered an advert for potential suppliers on the Mumsnet forum.<br />
<br />
"I saw the advert offering to pay women to donate breast milk on a forum and it made me laugh," said mother of one Victoria.<br />
<br />
"There were so many comments and people were having a debate on whether it could be genuine. "So I thought I'd find out."<br />
<br />
Since then another 14 women have volunteered to become donors to The Icecreamists parlour in London's West End. Each donor receives &pound;15 (or about $24) for every 10 ounces of milk extracted by breast pumps.<br />
<br />
And to maintain the highest standards, health checks for the lactating women are exactly the same used by the NHS to screen blood donors.<br />
<br />
"It wasn't intrusive at all to donate -- just a simple blood test," said Victoria. "What could be more natural than fresh, free-range motherʼs milk in an ice cream?<br />
<br />
"And for me itʼs a recession beater too -- whatʼs the harm in using my assets for a bit of extra cash! Itʼs a bit of fun isnʼt it?"<br />
<br />
In her day job, Victoria works with women who have problems breast-feeding their babies.<br />
She believes that if adults realise how tasty breast milk actually is, new mothers will be more keen to continue breast-feeding their babies. She insists breast milk is much more easily digestible than the more traditional cows' milk ice cream.<br />
<br />
Icecreamists' founder, Matt O'Connor, 44, from Hampshire, is confident he's got a scoop on his hands, even if the breast milk ice cream is priced at a cool &pound;14.<br />
<br />
We have to say though that initial testers weren't so keen to suck it and see!<br />
<br />
He tested a range of radical ice creams at Selfridges in London last year and they proved so popular he decided to launch a new ice cream parlour business.<br />
<br />
So might not Baby Gaga make some ice creams lovers want to, well, gag?<br />
<br />
Matt, resplendent in a pink, purple and white jacket, insists not. "The Baby Gaga tastes creamy and rich" says Matt. "No-one's done anything interesting with ice cream in the last hundred years.<br />
<br />
"We've came up with a method of infusing ice-cream with breast milk. We wanted to completely reinvent it.<br />
<br />
"And by using breast milk we've definitely given it a 100 percent makeover. Itʼs just one of a dozen radical new flavours weʼve invented. We want to change the way people think about ice cream."<br />
<br />
The recipe blends breast milk with Madagascan vanilla pods and lemon zest, which is then freshly churned into ice cream.<br />
<br />
The good-for-you feel doesn't extend to Gaga-style costumed waitresses complete with breast cone costumes, who serve the breast milk ice cream in a martini glass with liquid nitrogen poured into the glass through a syringe.<br />
<br />
"If it's good enough for our children it's good enough for the rest of us," said Matt. "Some people will hear about it and go, yuck!"<br />
<br />
"But actually it's pure, organic, free-range and totally natural. I had a Baby Gaga just this morning and I feel great."<br />

	When my sisters and I were children, our list of most-favored Valentine's Day treats generally consisted of store-bought Conversation Hearts, Hershey's Kisses, and those ridiculous wax lips that you'd chew on forever before realizing that they were really only chewable, rather than edible.<br />
	<br />
	We always enjoyed anything that ended up in our Valentine's treat bags. But as we got older, we came to realize that February 14th provided us the perfect excuse to get into the kitchen and make our family a celebratory treat of a more grownup variety -- and the gooier, the better. It's a tradition that has followed each of us into adulthood, binding us with the understanding that nothing says love quite like a homemade chocolate mousse.</div>

	In keeping with family custom, Anna and I decided to take a detour from our <a href="http://www.parentdish.com/tag/@family-chef" target="_blank">usual monthly walkabout</a> in the produce aisle so that we could bring you one of our favorite mousse recipes. It's a confection made with white chocolate, rather than the usual milk or dark chocolate, and it beautifully spotlights the cherry sauce we prepared for the topping. (Keep in mind that, with a cherry sauce, the recipe also doubles as a Presidents Day dessert, in honor of young George Washington's truthfulness regarding that unfortunate tree incident. So feel free to keep celebrating throughout the month.)<br />
	<br />
	For those preferring a different red fruit, we can also vouch for the use of raspberries -- Anna's favorite -- atop this very tasty dessert. Whichever fruit you choose, we recommend serving this dessert in a glass dish or on a glass plate for extra visual sparkle.<br />
	<br />
	Here's the recipe for White Chocolate Mousse With Cherry Sauce from <a href="http://www.kitchendaily.com/recipe/white-chocolate-mousse-with-cherry-sauce-145121" target="_blank">KitchenDaily</a>:<br />

	Ingredients:</div>

	2 beaten egg yolks</div>
<div>
	1/2 cup milk</div>
<div>
	1 teaspoon cornstarch</div>
<div>
	3 tablespoons sugar</div>
<div>
	3 oz. white baking bar, grated</div>
<div>
	1/2 teaspoon vanilla</div>
<div>
	1 1/2 cups whipping cream</div>
<div>
	1/2 cup sugar</div>
<div>
	2 tablespoons cornstarch</div>
<div>
	1/2 cup water</div>
<div>
	2 cups fresh or frozen pitted tart red cherries</div>
<div>
	1 tablespoon orange liqueur or orange juice</div>
<br />
<strong>Directions:</strong> Chill a small mixing bowl. Combine egg yolks, milk, 1 teaspoon cornstarch and 3 tablespoons sugar in a heavy small saucepan. Cook and stir over medium heat until slightly thickened and bubbly. Cook and stir 2 minutes more. Remove from heat. Stir in the grated baking bar and vanilla; stir until melted. Cool to room temperature.<br />
<br />
Beat whipping cream in the chilled bowl on low speed until soft peaks form (tips curl). Gently fold the cooled baking bar mixture into the whipped cream. Spoon the mixture into a 2-quart square baking dish. Refrigerate 4 to 24 hours or until set.<br />
<br />
For cherry sauce, combine 1/2 cup sugar and 2 tablespoons cornstarch in saucepan. Stir in water. Add cherries. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more. Remove from heat. Add orange liqueur or orange juice. Cool slightly.<br />
<br />
To serve, spoon chocolate mixture onto dessert plates. Drizzle with warm cherry sauce. Makes 6 servings.<br />
<br />
<em>Cook's note: Recipe calls for drizzling warm sauce over mousse. Anna and I found that if it's too warm -- as in just off the stove -- it'll melt the mousse. "Slightly warm" is probably a safer bet. And remember: Don't drizzle ahead of time; wait until you're ready to serve.</em><br />

In 2007, there was a big push for microwave popcorn manufacturers to stop using <a href="http://www.washingtonpost.com/wp-dyn/content/article/2007/05/06/AR2007050601089.html" target="_blank">diacetyl</a>, an ingredient in artificial butter flavoring, after the chemical was blamed for sickening hundreds of workers in popcorn plants and destroying the lungs of at least three heavy microwave popcorn eaters.<br />

Manufacturers did vow to give up the toxic chemical in favor of other butter substitutes shortly thereafter, but, in the meantime, we lost our taste for microwave popcorn.<br />
<br />
But a friend recently turned us on to Farmer Steve's Popcorn, and our microwave has been popping with excitement ever since.<br />

Grown on a small family farm in Hunterdon County, N.J., Farmer Steve's Popcorn is certified organic by the New Jersey Department of Agriculture, which means it's grown without chemical fertilizers, pesticides or additives.<br />
